How do you do your groceries? Once a week? Every day?
Honestly, I don’t have the time to do it every day. But once every three days
is perfect! It stays fresh and when you buy different kind of seasonal fruits,
vegetables and herbs, it’s easy peasy to make every day a healthy nice meal.
Yesterday it was quite a busy day and my body was craving
some veggies. And something sweet and fresh... Applesauce! Really, applesauce
goes with everything. Well, at least with this dish. While browsing the kitchen, a couple of
parsnips, sweet potatoes and red onions had created my dinner inspiration
already. Simple, fast and delicious! Especially with the semi sour vinaigrette,
the soft sweetness of the applesauce and the crispy roots. Enjoy!
For two persons
2 parsnips
1 sweet potato
1 red onion
Pinch of seasalt
Pinch of white pepper
2 tbsp of olive oil
Vinaigrette
1 tbsp of tahin
1 tbsp of apple vinegar
On the side
3 or 4 or 5 tbsp of applesauce (just pure with some
cinnamon, optional sweetened)
Recipe
Preheat the oven at 180 °C. Cut the parsnips
and potato in cubes, slice the onion in half moons and put everything together
in an oven dish. Season with the olive oil, pepper and salt. Put the dish in
the oven for like 25 – 30 minutes. In the meantime you can make the
vinaigrette. Mix it up all together et voil à.
For the rest
Today I'll cook some quinoa next to it, for lunch. Healthy cooking makes me feel awesomely happy, my energy level is much higher and a lot of things are 'kiddy proof'.
