PANCAKES FOR BREAKFAST






'Creativity is like electricity'

Somehow, I would like to have the sundays relaxed. Is it because it's such an 'old tradition' or just because I want to have at least one morning to start without being in a hurry? And since I have been experiencing a whole new rhythm, sleeping late and taking it easy are over and done. More time to make nice breakfasts, dinners and more time to spend in my wardrobe. This morning I felt like making summer type pancakes. Good ones. Thick ones, without being unhealthy. It's possible, simple and delicious. Happy sunday to y'all! xo florine

2 cups of buckwheat flour 
3 eggs
1 banana
2 cups of rice milk
2 tsp of cinnamon 
Pinch of salt
2 tsp of coconut oil
Almond butter
Organic strawberry jelly

Mix well all ingredients in a large bowl. Make sure the mixture is not too thin, because you would like to make 'American' pancakes. Heat the oil in a hot pan, pour 1/3 cup batter onto the preheated pan. Flip it with a spatula when the pancake begins to look 'dry'. Cook 1 minute longer. Serve warm with strawberry jelly and almond butter. SO good.
